BETWEEN A FAVORITE EVERYDAY APERITIF AND A MYTH

Plums are harvested by hand or machine shaking, when technologically ripe fruits contain an optimum sugar and acids ratio. This is traditionally evaluated by taking primarily visual elements into account, eg. plums become softer with accentuated fruity aroma and gold-yellow pulp brownish around the stone.

Welcome to Benkovac city, the heart of Ravni Kotari!
This tiny little town in the heartland of Dalmatia caches something truly remarkable… winery and distillery Benkovac.

The story about Old Slivovitz production by Badel 1862 Croatia begins at this very place. This is where the secret of its specificity and perfection lies.

First the pits and parts of skin are separated from the fruit flesh of ripe harvested plums. Afterwards, fruit flesh is pulped. Plums reflect the climate conditions of the year and naturally vary from one harvest to the other.

The process of fermentation also varies depending on the quantity of sugar, autochthonous yeast and temperature of koma (plum purée). It usually lasts for two weeks. Distillation, which follows, is a process in which the fermented product is heated in special cauldrons and is turned into a pure distillate.

Such fruit distillate retains plum’s genuine properties at their best.

Boasting both knowledge and experience, the masters of distillation at Badel 1862 have been producing this authentic beverage for years for the expert taste buds of true connoisseurs.

Old Slivovitz by Badel Croatia is distilled at distillery Benkovac.

The distillate ages in wooden casks made of Slavonian Oak for at least 12 months.

This is where the gold-yellow color and divine fruit bouquet typical of Badel Slivovitz come into being.
